Elisabeth et Marie-Laurence créent une gamme de vins de terroir, à l’image de la diversité des sols de Saint-Marcel d'Ardèche, des treize cépages méditerranéens et de leur inspiration.
Une goutte
This is Elisabeth and Marie-Laurence’s most recent creation, after 18 seasons of wine-making! Playing on lightness (12.5% vol.), this wine is a blend of various “gouttes” (“free-run juices”) from several of our Côtes-du-Rhône plots in Saint-Marcel d’Ardèche. “Une Goutte” is a unique patchwork of aromas and textures, which varies from one vintage to another.
GRAPE VARIETIES : 30% Grenache noir, 30% Cinsault, 30% Syrah, 10% Clairette, Marsanne, Viognier, Grenache rose.
TERROIR : Argillaceous limestone soil, bordered by oaks and forest. The parcels enjoy southern and south-eastern exposures. The vines are 40 years old. The yield is 30 hectolitres per hectare.
HARVEST : The grapes are hand-picked. Thorough selection – on the rootstock itself.
WINE-MAKING PROCESS : This wine is made from free-run juice, the first “gouttes” produced by whole-bunch (semi-carbonic) vinification. No added yeasts or any enological product whatsoever.
The winemakers play with the particularities offered by the combination of grape variety and soil, adding nothing in the process except for a tiny dose of sulphur.
Each vintage is unique, consisting in juices – “gouttes” – both light and flavourful which, once blended together, give birth to “Une Goutte”!
APING : Nine months in concrete tanks.
CULTIVATION : As for all our other cuvées: no pesticide, no herbicide, no insecticide – our estate has always been chemical free. Vinified using only indigenous yeasts, as has always been the case at the domain. “Agriculture Biologique” (organic) certified by “Ecocert.”
